<h2>Keemun Tea History</h2>
<p>Keemun locates in Anhui Province, China. It is namable for its tea.In the middle of the last century, a mistake occurred in China in the manufacture of a specific tea. That tea was KEEMUN.<br />
Until that mistake, this tea had always been processed as a green tea.<br />
An Imperial Army was passing through a specific part of the province of Anhui. It was the area in which Keemun was picked and processed. A high ranking officer needed quarters for his officers to over-night in and the only available space large enough was a tea factory.<br />
The factory was in the process of manufacturing Keemun (Quemon-Mandarin Dialect). The Imperial General Officer threw the tea factory workers out, even though they were in the middle of processing a batch of tea, and took over the factory.<br />
The officers stayed only one night and left the next morning. After they had left, the factory workers hurried back to inspect the tea. Alas, it had been naturally processed into a black tea because it had not been fired to prevent the process.<br />
The tea was cupped by the Tea Factory Master and proclaimed to excellent.<br />
Keemun, from that point on was now processed as a black tea, although some rare and expensive Keemun green tea is still manufactured.</p>

<p>Keemun Black Tea is an exquisite black tea from the southern Anhui province in China. <h2>Brewing Guide of Keemun Black Tea</h2>
<p>We recommend using purple clay or porcelain tea ware. Rinse tea cup and teapot with hot water. Use about 2 grams of tea leaves (1-2 teaspoons) for every 150ml of water. Steep tea leaves in hot water at 100°c (212°F) for 1 minute for the first and second brewing. Gradually increase steeping time and water temperature for subsequent brewing. If you like milk with your tea, add 10 to 15ml of sweetened/plain dairy milk and stir.</p>

<p>Although Chinese tea drinking has been associated with health benefits for centuries, only in recent years have its medicinal properties been investigated scientifically. The October issue of Harvard Women&#8217;s Health Watch recognizes the healthy power of tea while helping readers get the most out of their cups.</p>
<p>Chinese Tea&#8217;s health benefits are largely due to its high content of flavonoids—plant-derived compounds that are antioxidants. Green tea is the best food source of a group called catechins. In test tubes, catechins are more powerful than vitamins C and E in halting oxidative damage to cells and appear to have other disease-fighting properties. Studies have found an association between consuming green tea and a reduced risk for several cancers, including, skin, breast, lung, colon, esophageal, and bladder.</p>
<p>Additional benefits for regular consumers of green and black teas include a reduced risk for heart disease. The antioxidants in green, black, and oolong teas can help block the oxidation of LDL (bad) cholesterol, increase HDL (good) cholesterol and improve artery function. A Chinese study published recently in the Archives of Internal Medicine showed a 46%-65% reduction in hypertension risk in regular consumers of oolong or green tea, compared to non-consumers of tea.</p>
<p>The October issue provides a few tips to get the most out of Chinese tea drinking:</p>
<ul>
<li>Drinking a cup of tea a few times a day to absorb antioxidants and other healthful plant compounds. In green-tea drinking cultures, the usual amount is three cups per day.</li>
<li>Allow tea to steep for three to five minutes to bring out its catechins.<br />
The best way to get the catechins and other flavonoids in tea is to drink it freshly brewed. Decaffeinated, bottled ready-to-drink tea preparations, and instant teas have less of these compounds.</li>
<li>Tea can impede the absorption of iron from fruits and vegetables. Adding lemon or milk or drinking tea between meals will counteract this problem.</li>

<p><font color="#006699">A new Chinese tea-plant must grow for five years before its leaves can be picked and, at 30 years of age, it will be too old to be productive. The trunk of the old plant must then be cut off to force new stems to grow out of the roots in the coming year. By repeated rehabilitation in this way, a plant may serve for about l00 years .</font></p>
<p><font color="#006699">For the fertilization of tea gardens, Soya-bean cakes or other varieties of organic manure are generally used, and seldom chemical fertilizers. When pests are discovered, the affected plants will be removed to prevent their spread, and also to avoid the use of pesticides.</font></p>
<p><font color="#006699">The season of tea-picking depends on local climate and varies from area to area. On the shores of West Lake in Hangzhou, where the famous green tea Longjing (Dragon Well) comes from, picking starts from the end of March and lasts through October, altogether 20-30 times from the same plants at intervals of seven to ten days. With a longer interval, the quality of the tea will deteriorate.</font></p>
<p><font color="#006699">A skilled woman picker can only gather 600 grams (a little over a pound) of green tea leaves in a day.</font></p>
<p><font color="#006699">The new leaves must be parched in tea cauldrons. This work , which used to be done manually, has been largely mechanized. Top-grade Dragon Well tea, however, still has to be stir-parched by hand, doing only 250 grams every half hour. The tea-cauldrons are heated electrically to a temperature of about 25<sup>o</sup>C or 74<sup>o</sup>F. It takes four pounds of fresh leaves to produce one pound of parched tea.</font></p>
<p><font color="#006699">The best Dragon Well tea is gathered several days before Qingming (Pure Brightness, 5th solar term) when new twigs have just begun to grow and carry &#8220;one leaf and a bud.&#8221; To make one kilogram (2.2 lbs) of finished tea, 60, 000 tender leaves have to be plucked. In the old days Dragon Well tea of this grade was meant solely for the imperial household; it was, therefore, known as &#8220;tribute tea&#8221;.</font></p>
